It may not be as hard as you think to get kids to eat more veggies. Sweet potatoes are naturally sweet and delicious, so you don’t have to disguise them and trick your kids into enjoying healthier foods.

Sweet potatoes, sometimes called yams, are loaded with nutrition:

•Sweet potatoes have more vitamin A than any other vegetable. Vitamin A is necessary for strong tissues and maintaining a healthy immune system.

•The sweet potato is a complex carbohydrate that contains more than one-third the recommended daily requirements of vitamin C.

•Potassium in sweet potatoes also helps maintain fluid and electrolyte balance in the body cells, as well as normal heart and nerve functions.

HEAVENLY YAM DELIGHT

Can you imagine Groundhog’s Day with out Punxsutawney Phil? I know that I couldn’t. Groundhog’s Day is just as important to February as Black History Month.

OK, I’m kidding but let’s get real. Phil is famous, and he even has a movie centered around his big day. That movie has become a cult favorite.

At first I didn’t get it and then I watched it a few times, it is a cool movie.

Time of reflection

The inclement weather didn’t keep more than 200 from celebrating Valentine’s Day with the men of the Kappa Scholarship Endowment Fund for the 19th annual KSEF Valentine’s Day Scholarship Ball at the Edgewood County Club Feb. 13.

This year’s theme was “My Funny Valentine” and comedian David “The Frog” Bey put the funny into the evening with a set that made the whole room laugh.
